Ubiquity Desktop installer icon not available for Installation

I have installed Linux Mint 19 on my system and done some updates / installation of software that we use as a standard within our organisation.

Initially, Pinguy Builder would NOT make an ISO of greater than 35K. After putting in "deb http://packages.linuxmint.com/ tara romeo" in the "official-packages-repositories.list" file in /etc/apt/sources.d/, the program generated an ISO of 2.5GB.

Installing this to a USB driver and booting with this ISO, gave the login for the user but after logging in, did not give the install icon in the Desktop of the logged in user.

During the "Backup" option process, I noticed the following messages:

" Installing the Ubiquity GTK frontend
sed: can't read /usr/share/applications/ubiquity.desktop: No such file or directory

Then:
sed: can't read /usr/share/ubiquity/apt-setup: No such file or directory
sed: can't read /usr/share/ubiquity/apt-setup: No such file or directory
sed: can't read /usr/share/ubiquity/apt-setup: No such file or directory

And:
/usr/bin/PinguyBuilder" line301: /usr/share/ubiquity/apt-setup: No such file or directory
/usr/bin/PinguyBuilder" line302: /usr/share/ubiquity/apt-setup: No such file or directory
/usr/bin/PinguyBuilder" line303 /usr/share/ubiquity/apt-setup: No such file or directory
/usr/bin/PinguyBuilder" line306: /usr/share/ubiquity/apt-setup: No such file or directory
/usr/bin/PinguyBuilder" line310: /usr/share/ubiquity/apt-setup: No such file or directory
/usr/bin/PinguyBuilder" line311: /usr/share/ubiquity/apt-setup: No such file or directory

After this, the program proceeds, with a few warnings:
/usr/bin/PinguyBuilder" line564: warning: command substitution: ignored null byte in input

and the same message repeated for lines 566, 568, 570, 572

What do I need to do to get the Install icon on the desktop?

Also, going to the "User Settings" to select the user whose home directory will be backed up, selecting a user and clicking on OK, just results in a dialog box saying "Copying files" and this does not stop.
